Cheeseburger Quesadillas

Quesadillas with all the bacon cheeseburger goodness served up with a special sauce!

Quesadillas are a staple recipe in my household. I love making different variations too and this one has all the flavors of a bacon cheeseburger. The original is a quesadilla with two tortillas but I have never been able to flip them that way. BUT if you are a confident flipper, you do you! You can choose your toppings and then there is a Special Sauce for dipping, so you can go a little plain Jane or all out.

What You Need:

For the Special Sauce:

  • 1/2 cup mayonnaise

  • 2 Tbsp. ketchup

  • 2 Tbsp. minced dill pickles

  • 1 Tbsp. minced onion

  • 2 tsp. white vinegar

For the Quesadillas:

  • 1 lb. ground beef, cooked and crumbled with salt and pepper

  • Ketchup (2 parts)

  • Mustard (1 part)

  • Large flour tortillas

  • Shredded cheddar cheese

  • Chopped onions

  • Chopped pickles

  • Chopped, cooked bacon

Directions:

  1. For the Special Sauce: Add ingredients to a bowl or airtight container and stir to combine. Store in fridge until ready to use.

  2. For the Quesadillas: Add cooked ground beef to a medium bowl with ketchup and mustard (2 parts to 1 part) to desired sauciness. It helps if it’s a little saucy!

  3. In a large skillet coated with nonstick spray, add a tortilla to the bottom and top with a thin layer of cheddar cheese on half of the tortilla, then ground beef mixture.

  4. Add desired toppings (onion, pickle, bacon, etc.) and then another thin layer of cheese. Fold in half.

  5. Brown each side, flipping once and then transfer to a cooling rack to cool before cutting into wedges.

  6. Serve quesadillas with Special Sauce.
