Blueberry Banana Nut Oatmeal

This easy oatmeal can be ready in under 10 minutes and is a wonderful way to start your day!

I eat oatmeal for breakfast almost every single day. My dietition recommended it because it’s a good source of fiber and is filling. I add skyr yogurt for protein and fresh berries for flavor. But I am always on the hunt for an easy recipe I could make on days I’m at home and can make my breakfast. It’s definitely more cost effective to buy a container of oats instead of the instant packets. This particular oatmeal recipe is so easy to make and it has so much flavor. I am not really a huge fan of bananas unless they are baked into bread, muffins, or cake, but this recipe wasn’t overwhelmingly banana and it worked. I loved the crunch of the walnuts too! It was such a great breakfast that wasn’t overly sweet and had so much flavor!

What You Need:

  • 1/2 cup old fashioned oats

  • 1/2 cup water

  • 1/2 cup milk

  • 1 small banana, sliced

  • 1 Tbsp. brown sugar

  • 1/2 tsp. vanilla

  • 1/4 cup fresh blueberries

  • 1 Tbsp. chopped walnuts

Directions:

  1. Add oats, water, milk, and half the sliced banana into a saucepan. Bring to a gentle boil over medium heat, stirring until cooked, about 3 minutes.

  2. Remove from heat and stir in brown sugar and vanilla.

  3. Pour into a bowl and top with blueberries, walnuts, and remaining banana.
