Banana Bread Muffins
The perfect portion of banana bread in muffin form!
I need to make both muffins and banana bread more often because I love both, but have been terrible doing either. This is, of course, the best of both worlds because you get banana bread ready in much less time and already portioned into the perfect snack size amount (or breakfast!).
What You Need:
1 1/2 cups all purpose flour
1 tsp. baking soda
3/4 tsp. cinnamon
1/2 tsp. salt
1/2 cup unsalted butter, melted
1/3 cup granulated sugar
1/4 cup brown sugar
2 large eggs
1 tsp. vanilla extract
1 cup mashed bananas, about 3 medium
1/2 cup chopped walnuts or pecans (optional)
Directions:
In a small bowl, whisk together flour, baking soda, cinnamon, and salt. Set aside.
In a medium bowl, whisk together melted butter, granulated sugar, and brown sugar.
Then add eggs, vanilla, and bananas. Mix until well combined.
Add dry ingredients and mix until just combined.
Fold in walnuts or pecans if using.
Pour batter into a 12 cup muffin tin lined with paper liners.
Bake in a preheated 350 degree oven for 18 to 20 minutes or until a toothpick comes out of the center of the muffin clean.
Let cool in pan briefly and then remove to a wire rack to finish cooling.
