California Chicken with Avocado Salsa

I have become obsessed with marinated chicken and avocado salsa together. This recipe is similar to another recipe I’ve made recently and will hopefully post in the future. In this recipe, it is more Italian flavors rather than Mexican flavors. The chicken has a slightly sweet hint with the honey but so savory with balsamic and garlic. It’s such a bright and fresh recipe!

What you need:

  • 3/4 cup balsamic vinegar

  • 1/4 cup honey

  • 3 cloves minced garlic

  • 2 Tbsp. olive oil

  • 2 tsp. Italian seasoning

  • 1/2 tsp. salt

  • 1/4 tsp. black pepper

  • 4 boneless, skinless chicken breasts

  • 2 avocados, diced

  • 3 roma tomatoes, diced

  • 1/4 cup fresh basil, chopped

  • Salt and pepper, to taste

  • 4 slices mozzarella cheese

  • Balsamic vinegar, for drizzling

Directions:

  1. In a medium bowl, whisk together balsamic vinegar, honey, garlic, olive oil, Italian seasoning, 1/2 tsp. salt, and 1/4 tsp. black pepper.

  2. Add chicken breasts and toss to coat. Marinate for 30 minutes.

  3. In a small bowl, add avocado, tomato, basil, and salt and pepper to taste. Set aside.

  4. Cook chicken on the grill over medium high heat for about 6 minutes on each side or until cooked all the way through.

  5. Remove from grill and immediately top with mozzarella cheese and avocado mixture. Drizzle with balsamic vinegar, if desired.
